Hey Josean! Good question. We use the 's to express possession. So for example "el libro de John" is "John's book" because the book belongs to John.

But in your example there is no possession. If we said "history's museum" we would be implying that the museum belongs to history, which is not accurate. The museum is about history, but it does not belong to history. So in this case we cannot use the 's. We say "museum of history".
